Foodie Fridays: Orange Beets
In my opinion, beets are among the most underrated vegetables out there. (How many of you thought that the beet was a fruit? A common mistake!) Beets are lovely in color and palatable in texture, and I’m a big fan of them. I’m hoping that with this earthy and sweet recipe—which makes the perfect side dish—you’ll be a fan of beets in no time too!
500 g beets, peeled, cubed, and precooked
10 g vegan margarine
15 g brown sugar
125 ml orange juice
20 ml lemon juice
10 g cornstarch
14 g orange marmalade
Salt, to taste
- In a large saucepan, combine the beets, margarine, and brown sugar. Cook on low heat until the sugar melts.
- Combine the juices and the cornstarch. Pour over the beets and bring to a boil.
- When the food has thickened, reduce the heat and add the marmalade.
- Stir for a few minutes, and then serve. If not serving immediately, the orange beets can be reheated.
