Foodie Fridays: Easy Tortilla Pie
Looking for a fun dish to eat on a lazy Friday night? Try this yummy tortilla pie! While it certainly doesn’t rank as health food, it is better for you than speed-dialing for pizza delivery.
1 large onion, chopped
14 oz. faux ground beef (try Gimme Lean Beef)
3 Tbsp. extra virgin olive oil
1/4 cup tomato paste
1/2 cup tomato salsa
1 tsp. cumin
1 large garlic clove, chopped
Approx. 2 Tbsp. taco seasoning
2 cups frozen corn
3 Tbsp. chopped spinach
3-4 10-in. flour tortillas
1 16-oz. can vegetarian refried beans
2 cups shredded Daiya cheddar or pepperjack vegan cheese or other soy cheese
- In a large skillet, sauté the onion and faux beef in olive oil for a few minutes, stirring frequently to prevent sticking.
- Add remaining ingredients (except for the tortillas, beans, and cheese) and continue to cook, ensuring that the mixture does not become too thick. (Add more salsa, if this is the case.)
- In a deep-dish pie plate, lay one tortilla on the bottom. Spread it with a 1/4-inch-thick layer of refried beans, then a layer of the faux beef mixture, then a layer of cheese. Top with another tortilla and repeat layers, ending with a tortilla brushed with olive oil.
- Bake at 400ºF for 25 minutes.
