Foodie Fridays: Bruschetta

This Italian favorite makes a great appetizer or a simple and light lunch.

Bruschetta
 
2 ripe tomatoes, finely chopped
2 green onions, minced
10 Kalamata or green olives, chopped
1-2 Tbsp. prepared pesto or fresh basil, chopped
3 large cloves garlic, chopped or crushed
2 Tbsp. capers, whole or chopped
3-4 Tbsp. olive oil
1/4 cup fresh, chopped cilantro (optional)
1-2 tsp. fresh squeezed lime juice (optional)
Salt and pepper, to taste

  • In a bowl, toss together all the ingredients.
  • Serve on slices of French baguette or your favorite toast.

Makes 4 servings
