Foodie Fridays: Braised Baby Bok Choy
Everyone needs leafy greens in their diet, and when they’re cooked this way, they’re sure to satisfy your taste buds. A great side to many a dish, this one is sure to become a favourite with the entire family.
12-16 baby bok choy
1/2 cup vegetable broth (or 1/2 cup water with two tsp. soy sauce)
4 large garlic cloves, sliced
1 tsp. grated fresh ginger
2 Tbs. toasted sesame oil
Salt and pepper, to taste
Toasted cashews (optional)
- Place all above ingredients in a large skillet, cover, and heat over medium-high heat for 2 to 3 minutes.
- Remove the baby bok choy and arrange on a platter. Continue cooking the liquid until it is reduced to a somewhat thick sauce that can be poured over the bok choy.
- Sprinkle with a handful of toasted cashews, if desired
Makes 4 to 6 side servings
