Recipe: Chocolate–Peanut Butter Crispies
Stuck on peanut butter? What could be better than combining it with chocolate? No one will even notice that there are no dairy products in these super-simple bars, which combine PB with dark chocolate for a classic yet indulgent treat. These have been a long-standing family favorite at picnics and potlucks, and they’ve recently become a favorite in our office as well on birthdays and other special occasions.
1 cup sugar
1 cup corn syrup
1 cup peanut butter
6 cups crispy rice cereal
2 cups semisweet chocolate chips
6 Tbsp. dairy-free margarine (e.g., Nuttelex or Blue Bonnet brand’s light variety)
2 Tbsp. cold coffee (leftover coffee will work)
- Cook the sugar and the corn syrup in a medium saucepan over medium heat until bubbly. Remove from the heat, add the peanut butter and cereal, and mix well.
- Spread the mixture in a 9-inch-by-13-inch pan. Press down lightly with clean hands.
- Melt the chocolate chips in a double boiler, stir in the margarine and coffee, and pour over the cereal mixture. Chill until firm and cut into squares.
Makes 2 dozen squares
